Unlike canisters that lock the air inside with the contents, the AirScape food storage canister is an innovative container that removes substance-eating air, forcing it out and locking it out. The AirScape is so effective you can actually hear the air escaping from the storage canister as you press the plunger down. Even storing flour isn't a problem as a fine mesh screen has been added to the canister's plunger lid preventing an old-faithful geyser of flour as you press the air out. So rest assured you once a month bakers... that brown sugar won't rival diamonds on the Mohs scale of hardness.
